
Here I give you another plant-based recipe that is super tasty and easy to cook! It is inspired by a meal that I had whilst traveling in Alicante in a lovely restaurant called Lluvia (which I highly recommend if you visit!). Have you ever been in a situation where there were no veggie alternatives and you had to piece together some sort of meal! The pineapple burger gives a delicious and exotic alternative to expensive meat alternatives. Please like and comment to let me know what you think.

Serves: 2
Ingredients:

Pineapple - 1 Whole or Tinned Rings
Onion - 1 Half
Garlic - 2 Cloves
Crusty Buns - 2
Salad Leaves - Bunch
Sweet Chilli Sauce - 2 Tablespoons
Chilli Flakes - Optional
Olive Oil to Cook With
Method:
1) Begin by preparing the pineapple (if you have a fresh one). I find it easiest to chop off the bottom and top. Turn the pineapple upright and slice down the sides. Then chop the pineapple into slices approx 1.5cm thick. Mine gave me four slices, two of which I wrapped and placed in the freezer for another day.



2) Heat some oil in a large pan on low to medium meat, chop the onion and garlic and add it to the pan. Slow cook until the onion softens/caramelises and garlic cooks rather than burns.


3) Remove from the heat and place aside. Add a little more oil and the pineapple slices. Optionally add the chilli flakes here. Turn the heat up to a medium to high heat and continue to cook the pineapple until it has softened and the edges begin to turn a golden browned colour.

4) Assemble the burger and thats it! Add any side dish that you wish.
*Warning* - The pineapple can be very hot inside so wait for it to cool before eating.
