Easy 15 Minute Black Bean Stir Fry - Tofu Cheat

I wanted to make this one super easy to follow using ingredients you will already have. This is a filling meal filled with colour and flavour. Marinated pre-prepared tofu is delicious and an easy protein addition to any meal! It can be found in most supermarkets and often tastes delicious without the hassle of trying to drain a tofu block.


Cooking Time: 15 Minutes


Serves: 4


Ingredients:



Mushrooms - 1 Pack Normal or Special Variety

Broccoli - Whole Head or Bunch of Tenderstem

Salad or White Onion - 1

Green Beans - Bunch

Carrots - 4 Small

Red Pepper - 1

Marinated Tofu - 1 Pack

Noodles - 1 Pack

Black Bean Sauce - 1 Pack - Choose Low Sugar Varieties

Olive Oil to Cook With


Method:


1) Chop the beans, broccoli and onion. Slice or grate the carrot into thin pieces.

A hot tip for carrots: to reduce waste from carrots and to be able to consume all that they have to offer. Get yourself a vegetable scrubbing brush. These brushes have hard bristles that remove all dirt and hair roots from the carrot. This means that you don't need to waste time peeling the carrot and you get more for your monies worth!



2) Heat some oil in a large pan and add the onion, broccoli and beans. Begin to cook, stirring regularly. Chop the red pepper and add to the pan.


3) Continue to stir and cook the vegetables for about 5 minutes or when the vegetables begin to soften, adding splashes of water to stop the vegetables from sticking to the pan.



4) Stir in the tofu. Shortly after, add the noodles and sauce. Allow the noodles to break apart and the whole dish to heat through.





5) Serve with optional sauces like siracha or sweet chilli.
